Two Salad Dressing Recipes
We’ve got salad greens in the CSA shares this week, and Farmer Kyle shared with us his own personal recipe for salad dressing. I also have a go-to recipe that is quick and easy to make. Farmer Kyle’s Homemade Dressing:
Dice 1/2 onion and 2-4 cloves of garlic
Put then in to a bowl or jar and mix dressing in
Olive oil
Balsamic Vinegar
tbs brown mustard
Pinch salt & Pepper
tsp brown sugar or maple or honey
Stir together and let this sit for 20 minutes, it will take the kick out of the onions and garlic but still have some flavor, then add to salad and enjoy! Goes great with blue cheese or gorgonzola!
Blogger Sarah’s Homemade Dressing:
Equal parts VT apple cider vinegar and oil (locally-grown sunflower oil or olive oil is great)
Maple syrup (about 1/4 part, to taste)
Ginger, minced
Garlic, minced
Fresh cracked black pepper
Mix all ingredients together in a mason jar with a lid; cover tightly and shake vigorously. Let sit for 20 minutes or so to allow the flavors to mingle. Stays good in the fridge for a few days.
