Garlic Scape and Kale Mashed Potatoes

This recipe is a great way to get the benefits of kale while enjoying savory, garlic mashed potatoes. I really enjoy garlic so I used all of the garlic scapes from this week’s CSA in this recipe. If you don’t want as much garlic flavor, use fewer scapes. While enjoying them with dinner, I had the thought that cheese could have made a great addition, but honestly when does cheese not make things better?


  • 1 lbs. bag of potatoes (I used a bag of small potatoes of mixed varieties)
  • 1 bunch of garlic scapes, about 10-15 scapes chopped into small pieces
  • 1 bunch of kale, stems removed and roughly chopped
  • 2 tablespoons of butter or olive oil
  • 1/4 cup milk
  • Salt and pepper to taste
  • Sprinkle of chili powder (optional)


  1. Bring a large pot of water to a boil. Add potatoes and boil until you can stick a fork easily through them, about 15 to 20 minutes. Once cooked, drain the water and place potatoes in a bowl and set aside.
  2. While potatoes are boiling, melt butter in a skillet over medium heat. Add scapes to the skillet and sauté until scapes are tender and fragrant, about five minutes.
  3. Add the kale to the skillet and continue to sauté until kale has wilted. Add salt and pepper to taste. If using chili powder, sprinkle over and mix into kale and scapes. Remove from heat and let cool for approximately 1 to 2 minutes.
  4. Place scapes and kale into a food processor or blender and pulse until well blended.
  5. Add the scape and kale mixture to the potatoes. Using a fork, potato masher, or mixer mash potatoes while mixing in kale and scapes.
  6. While mashing slowly add milk a little bit at a time to make the mash potatoes creamy. You can also add more butter as well as salt and pepper to taste.
  7. Enjoy while hot!
