Vegetable Broth
Vegetable broth is easy to make, and so good for you. It’s also part of many delicious recipes, like risotto, stews, and soups, including squash soup. Vegetable broth can also make use of the leftovers from vegetables you have used for other dishes, so it’s a great way to get the most out of your winter CSA share. Here’s how to make it:
About 1 cup carrot pieces
About 1/2 cup onion pieces
3 cloves garlic, smashed
Thyme
Bay leaf
1 teaspoon whole black peppercorns
Cover the vegetables and herbs in a large stock pot with water and bring to a boil; then simmer until the liquid is reduced by about half.
